Fall is for all things pumpkin spice

As the weather slowly shifts from t-shirts to flannels, pumpkin spice starts popping up everywhere. Here are a few pumpkin spice recipes to get you feeling festive for this fall season. 

Pumpkin Spice Coffee Cake 

Belle of the Kitchen shares with us a delicious coffee cake that adds pumpkin spice as a seasonal twist. This treat only requires a 15 minute prep time, 1 hour cook time and is able to serve 12 people. Go head to your kitchens to whip up some delicious fall flavors with this dessert. 

Ingredients

Cake:

1 cup unsalted butter, softened

2 cups white sugar

2 eggs

1 teaspoon vanilla

1 cup pumpkin puree

2 cups all purpose flour

2 1/2 teaspoons pumpkin pie spice

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

Streusel filling/topping:

1/4 cup all purpose flour

1/4 cup packed brown sugar

1/4 cup white sugar

1/4 teaspoon pumpkin pie spice

3 Tablespoons cold butter

1/2 cup pecans

Vanilla Glaze:

2 Tablespoons butter,, melted

1 cup powdered sugar

1-2 Tablespoons milk

1/2 teaspoon vanilla

Instructions

  1. Preheat the oven to 350 degrees. Grease and flour a springform pan with nonstick spray and set aside. Mix together all streusel ingredients until crumbly, or pulse ingredients using a food processor (this is my preferred method). Set aside.
  2. Cream together butter, sugar, and eggs with an electric mixer until creamy. Add in vanilla and pumpkin puree and mix until smooth.
  3. In a medium sized bowl, sift together the flour, pumpkin pie spice, salt, baking powder, and baking soda. Gradually add dry ingredients to the wet ingredients beating over low speed.
  4. Pour half of the batter into the prepared pan. Sprinkle with half of the streusel mixture then top with remaining batter. Sprinkle the rest of the streusel mixture over the top.
  5. Bake in a preheated oven for 50-60 minutes until the cake is cooked through and a toothpick inserted near the center comes out clean. Cool completely on a wire rack.
  6. To make the glaze: combine melted butter, powdered sugar, 1 Tablespoon milk, and vanilla in a small bowl. Whisk until smooth, only adding additional milk if mixture is too thick. Drizzle over the top of cooled coffee cake. Slice and enjoy!

Pumpkin Spice Blondies 

Thisisnotdietfood.com  is spicing up blondies this autumn. These treats only take a total of 25 minutes, including prep and cook time, to whip up. They are sure to be a fan favorite at your upcoming Halloween or Thanksgiving holidays. 

Ingredients

Blondies:

1 cup light brown sugar, packed

1/2 cup butter, melted

2 tsp vanilla extract

1/2 tsp salt

1 egg

1 cup all-purpose flour

2 tsp pumpkin pie spice

Topping:

1 12oz can cream cheese frosting

1 tsp pumpkin pie spice

Instructions

  1. Preheat the oven to 350F.
  2. In a large mixing bowl stir together the brown sugar, butter, vanilla, salt and egg until fully combined.
  3. Stir in the flour and pumpkin spice.
  4. Spray mini muffin tins with Pam spray for baking.
  5. Spoon batter into muffin tins filling cups about two thirds of the way.
  6. Bake for 13-15 minutes until the toothpick inserted in the centre comes out clean.
  7. Allow to cool for a few minutes before removing the blondies from the muffin tins.
  8. Allow the blondies to cool completely before frosting.
  9. Spoon the frosting into a piping bag fitted with a large star tip.
  10. Pipe frosting onto the blondies.
  11. Sprinkle pumpkin spice on top of the frosting.
  12. Enjoy!

Pumpkin Spice Latte 

InspiredTaste.net gives coffee lovers a sweet latte to enjoy. With a prep and cook time of only 10 minutes, this is the perfect treat to switch up your morning cup of coffee. 

Ingredients:

2 cups milk (dairy or non-dairy)

2 tablespoons pumpkin puree, or more to taste, see our homemade pumpkin puree recipe

1 to 3 tablespoons sugar, depending on how sweet you like it

1 tablespoon vanilla extract

1/2 teaspoon pumpkin pie spice, plus more for serving

1/2 cup strong hot coffee

Whipped cream, for serving

Instructions:

  1. Start by heating the milk, pumpkin puree, sugar, pumpkin pie spice, and vanilla extract on the stove.
  2. Mix the pumpkin spice milk with the strong coffee
  3. Add whipped cream if desired and enjoy!
