Holiday baking: The best Christmas morning cinnamon rolls

These delicious cinnamon rolls make the perfect Christmas morning breakfast. They can be prepared the night before, or the day of. Follow the video and the recipe posted below to make your very own cinnamon rolls from scratch.


Sponge

½ cup granulated sugar

½ cup vegetable oil

2 cups milk

4 cups all-purpose flour

1 tablespoon instant yeast or 1 packet dry yeast mixed with 2 tablespoons warm water

Dough

¾ cup all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

1 ½ teaspoons salt

Filling

8 tablespoons salted butter, softened

¾ cup packed light brown sugar

1 tablespoon cinnamon

Icing

2 ounces cream cheese, softened

½ cup salted butter, softened

Pinch salt

2 tablespoons milk or heavy cream

½ teaspoon vanilla extract

1 ¾ cups powdered sugar

Directions:

  1. Mix sugar, oil, and milk together in the bowl of a stand mixer. Let sit for 15 minutes.
  2. Add in the 4 cups of flour and yeast. Mix everything together and let rest until doubled in size – about an hour.
  3. Add ¾ cups flour, baking powder, baking soda, and salt. Mix until the dough is smooth and cohesive. Add additional flour if the dough is too sticky to handle.
  4. Transfer the dough to a covered greased bowl and let rise until doubled – about an hour.
  5. Roll the dough into an 18×12-inch rectangle on a lightly floured counter. Spread the softened butter on top of the dough. Then, combine the brown sugar and cinnamon and sprinkle across the butter.
  6. Using the long end, roll the rectangle into a log and cut into 12 even pieces. Place the rolls on a 13×9-inch pan and cover with a greased plastic wrap. Let rise for about an hour, until almost doubled.
  7. Bake for 18-25 minutes at 350º. The rolls should be lightly golden. Let cool.
  8. Use a handheld mixer to combine the cream cheese and butter. Mix in salt, milk, and vanilla. Add in powdered sugar and whip until the icing is smooth and creamy.
  9. Spread the icing across the warm cinnamon rolls.
